I find it very helpful if you can turn the reference image into grayscale. This can free up the artist in color choices. This can also help with getting the correct values in the image.
I usually duplicate the reference and covert it to grayscale manually in order to find the perfect values. I also like to have the reference both in color and grayscale so I keep the color version underneath the grayscale one.
